Mother's Day Challenge 💓

Can't go shopping?

How about an EDIBLE gift for mom?

I received this card in the mail from a dear friend who makes HANDMADE cards.  I was encouraged, and it made my day!

During these challenging times, it is more important than ever to let our loved ones know how much we appreciate them!

I hope you will show LOVE & APPRECIATION to your mom this weekend!

TASK:
Choose a recipe to make/cook/bake for her.  Perhaps Breakfast in Bed?  Lunch?  Dinner? or Dessert?  --Your choice!
(If you are living with a host mom, how can you show her your appreciation to her?💓)

Lucas' Show and Share:

My son made one of my favourites:  Cheese Quesadillas while I had a shower!  (I helped a little bit. 😄)

Quesadillas  mise en place: Dice sausages, white cheddar cheese, diced tomatoes, parsley, guacamole sauce

Cooked over a low stove, covered for 3-4 minutes to melt cheese, place second tortilla over top, flip to lightly brown other side.

Garnished with more parsley, served hot!

Cooking with Mrs. Anthony

Welcome to Joyful Cooking! I am so excited to share my passion for cooking with you, specifically, with children! A little about me, I am a mom of 2 boys, aged 8 and 11.  They are full of boundless energy and antics!  My husband is a professional working full time, and I am a part-time public school teacher.  I have been trained as a Home Economics teacher and worked as a high school Culinary instructor full time until my children were born.  I choose to be part-time because I value my time with the kids as they grow.    My first memories of cooking were of my mother preparing rice dumplings in our tiny apartment kitchen.  (See this link for a famous Singaporean vendor for   Dragon Boat Rice Dumplings )  I always wondered how she was able to wrap those bundles with nimble hands without losing a morsel.  One of my most  precious memories is of my grandmother, I watched in fascination as she created noodles from ...
