...That's what I call out to my kids. You'd think that they would com runnin' But NO, these days, they would rather play Minecraft or watch You Tube instead of eatin' a decent dinner! I have a real beef with this! Why aren't they coming to dinner?
COVID-19 has given them new access and freedom on electronic devices! My kids have never had so much screen time! They have difficulty working on their homework being in grade 4 and 6, and doing the best job they can to complete school assignments on line. The temptation of video games is only a click away! It is especially challenging when I have to look over my shoulder to finish my own work at my desk from home. Argh!
I am sure none of you are distracted by electronics right? *wink, wink*😉😉👿👼

SO, this is why I have devised "Kitchen Duty". The kids take turns: One child helps with cooking and cleaning in the kitchen, while the other child does trash, recycling, and compost, and cleaning. The next day, they switch. Studies have shown that when kids cook, they are more likely to eat healthier! Studies have also shown that kids who do chores at home are more successful later in life! Try one of the recipes I have shown below, or perhaps a family favourite passed on from your grandparents.
It has been tough to be "stuck at home" Remember that this whole situation has been tough on parents too! So, here is your chance to say "Thank You" to your parents" You have a chance to prepare a dinner for them to say THANK YOU! Dinner for your parents, because ACTIONS speak louder than words!

With summer approaching, grilling outside is an idea way to enjoy food. Ensure you know how to operate your BBQ, if you are unfamiliar, do not use propane or natural gas without help. Hamburgers can made with meat of your choice, ground beef, lamb, pork, chicken, turkey, and even combinations.
James keeps raw patties separated away from cooked burgers. He changes utensils or washes them. Grill the patties on medium heat for about 5-6 minutes per side to ensure they are cooked thoroughly. Some restaurants serve rare or medium sirloin burgers that are specially ground. However, contamination can easily occur and cause severe illness.
NEVER Eat pink hamburger. It will cause E.Coli poisoning.
Poultry:
Usually, the most common poultry is chicken, but turkey and cornish game hen are considered poultry. Although they have very similar structure, duck, goose, pheasant, squab, and quail are all categorized as "game". Poultry is more common because it is milder in flavour, versatile and more economical than some Beef and lamb.
You can watch the videos on TEAMS to learn how to de-bone a chicken. A turkey is the same process, only larger. Purchasing whole chickens can be economical, especially if you enjoy the white meat/breast meat. Wings are prized for their tenderness and are very expensive given the low meat: bone ratio. However, thighs and drumsticks are much lowercost. 2 Chickens deboned yielded 3 separate chicken dishes: Stuffed boneless wings, Chicken Schnitzel, Hainanese Chicken Rice.
When handling raw chicken, always wash hands with soap and warm water, sanitize cutting boards and equipment after touching raw poultry.

techniques & cooking method: Escalope (pounding thinly) Breading, Shallow Frying
Chicken Schnitzel, Pounded flat with a mallet to an even thickness
Breaded and Shallow fried until golden brown and crispy.
Smaller pieces of chicken became "chicken nuggets"
Dish #3: Hainanese Chicken Rice
techniques & cooking methods: poach, simmer, stock, rice pilaf
Poached chicken: Hainanese Chicken, broth is used to cook rice, and make soup to accompany chicken.
The secret? Fry the chicken fat with the rice before cooking!
I will be making this dish again FOR SURE!
It's worth it the effort!
Bonus Dish #4: Chicken Pot Pie
Techniques & Cooking methods: simmering, making a thickened, roux sauce, baking, pastry method
Add water to de-boned chicken legs. (Breast meat may be used if preferred.)
Drained poached, chicken legs, return bones to pot to simmer to make chicken stock.
Mise en place
Flour is added to diced vegetables to make a roux. Coat pieces of vegetables.
Slowly add chicken stock and milk to thicken.
Sauteed vegetables coated with flour for roux. Simmer gently, add peas at the end of cooking time. Allow chicken stew to cool while you make the crust.
Now for the CRUST! Passes the taste test!
The Pastry Crust can be made a day ahead of time to allow for chilling. Or Puff pastry can be purchased from the freezer section of grocery stores.
Pastry: Cut in butter with a pastry blender, add cold water, chill, then roll out thinly.
It is common to line only the top of the pot pie, since the stew can cause crust to be soggy at the bottom. However, if you prefer, make individual pie to reduce baking time. Use glass if possible so you can see that the pastry crust is cooked and golden brown.
The Chicken pot pie is baked for 45 minutes to 1 hour. Serve hot with a salad or other vegetables.
